ANÁLISIS DE LAS PÉRDIDAS POR EXUDACIÓN EN CERDOS ALIMENTADOS CON UN SUPLEMENTO DE SELENIO ORGÁNICO Y VITAMINAS E Y C EN DIETAS DE ENGORDE.
Abstract
In this work, we have studied 30 loins (L. dorsi) from 30 animals with commercial genotype (Pix(PixLw))x(LrxLw). They were assigned to either a control (15 animal) or a treatment (15 animals) group, and were slaughtered at an average live weight of 100 kg. The vitamin E (144 U.I./kg) and the selenium yeast (0,1 ppm Se) were fed from 20 kg live weight until the slaughter, and the vitamin C (670 ppm) from 80 kg until the slaughter. Two groups of parameters were studdied: a) Control "on line": Electrical conductivity at 30 minutes or 5 hours post-mortem (CE-1, CE-2), pH at 5 hours post-mortem(pH-2). All measures were carried out in the Semimembranosus muscle, pH and Electrical Conductivity at 5 hours post-mortem in the Longissimus dorsi muscle (CE-L, pH-L). B) Control in the laboratory: Dnp-loss in loin and loin chops of L. dorsi was studied at 24, 48, 72 and 120 hours post-mortem(PGP-l,PGP-2, PGP-3, PGP-4, PGF-1, PGF-2, PGF-3, PGF-4) and Cooking-loss at 24 hours post-mortem (PC). Our results show that the Drip-loss from loin was lower in chops obtained from treated animals. But not statistical significance, and a lower Electrical Conductivity in L. dorsi (P<0,05). The obtained results for Cocking-loss was not statistical different.Downloads
