Abstract

This essay attempts to analyze one of the most important problems in Valencian cities or small towns during the Later Middle Ages: the providing of food and particularly the provision of meat. For this study, we have used some aspects from the cattleraising, the organization of the commerce of meat or the role of the butchers in the vila of Alzira and this region of la Ribera del Xúquer, in the south of Valence.
