Abstract

This work presents a catalogue of archaeological sites related to the production of olive oil and wine in Carthago Nova and its hinterland. To date, a total of 70 items from 43 sites, mostly concerning mills and pressing facilities, have been identified. The thorough analysis of this evidence has given an initial but comprehensive first insight into the economic and technological dimensions of oil and wine production in the region between the late republic and the late Roman Empire.
