SALMONELLA: AMBIENTAL PREVALENCE OF DIFFERENT SEROTYPES IN OVINE SLAUGHTERHOUSES

Abstract

Foodborne disease of Salmonella is a problem of public health for sanitary autorithies, The aim of this work is to analyze the ambiental prevalence of different Salmonella serotypes in ovine slaughterhouses in relation to epidemiological factors causing contamination. Organic residues were analysed (in duplicate) sampled from 20 steps 01' Ihe slaughter's chain. Total number of slaughlerhouses investigated were 28, and Salmonella was isolated in 10 (35.7%). Thirty four strains were isolated belonging to: S. anatum (13); S. london (9); S. enteritidis (6); S. tiphimurium (3); S. hredeney (1); S. kapemba (1) and S. infantis (1). Slaughter, spoils and eviscerate areas were the places where Salmonella was more frecuently found.
