HYGIENIC-SANITARY QUALITY EVALUATION IN SCHOOL KITCHENS
Abstract
School kitchens (A,B,C and D) were checked in order to evaluate their hygienic conditions. The Spanish Public Health Authority has a form, which was used to obtain the necessary data during the visits of foodservice facilities, period from January to June. The form is refered to safety structures, food safety principles, the prevention of the cross-contamination and to personnel hygiene. At the end of the study period, it was observed an improvement in the hygienic practices on the part of fooddhandlers.Downloads
