Abstract

A study of the specific rotation of aqueous solutions of gelatin has been carried out. The specific rotation was determined on severa! conditions of temperature, pH and salt concentration. The results have been explained considering the different configurations of polypeptidic chains in gelatin molecule in ihe different studied conditions.
