Resumen

The present consensus view of biomembrane structure is that they are based on a lipid bilayer into which and around which the various proteins are situated. Most cell membranes are fluid at physiological temperatures. Cholesterol modulates this fluidity when present in the membrane. The inclusion of proteins in the bilayer leads to lipid perturbation, which increases when protein concentration is increased. Below the lipid phase transition, eutectic mixtures are formed, as proteins are segregated to protein-rich patches by the crystallising lipid.
